Chewy Sugar Cookies


2  3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon sea salt

1 cup unsalted butter, softened to room temperature

2 cups white sugar

2 eggs

1 1/2 teaspoons vanilla

1/2 cup white sugar for rolling


1. preheat oven to 350 F Line cookie sheets with parchment paper.

2. In a medium bowl stir together flour, baking powder, baking soda and salt. Set aside.

3. In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.

4. Gradually stir in flour mixture just until blended. Do not over-mix.

5. Dip cookie dough using a 1-inch cookie scoop, then roll each cookie in the white sugar, Place on parchment paper about 1 1/2 inches apart.

(No need to flatten cookies.)

Bake 8 - 10 minutes, or until lightly golden in color. Do not over bake.

Cool for 2 minutes on baking sheet before placing on wire rack to cool completely.
